9 fresh tilapia, whole
4 t fresh ginger, puréed
4 T paprika
3 T salt
1 onion, julienned
1 red bell pepper, julienned
1 green bell pepper, julienned
2 cups canola oil, for frying
3 T canola oil, for sautéing bell peppers
First Step → Clean entire fish, remove the gills, cut off the fins and tails.
Second Step → Lay a fish flat on a cutting board, and make 2 deep and short diagonal cuts on each side, leaving a half inch between the two cuts. Repeat for each fish.
Third Step → Prepare the seasoning by mixing the ginger, paprika, cayenne pepper, and salt into a thick paste. Rub the paste in and on each fi sh, making sure to get deep into the side cuts.
Fourth Step → Heat oil in a deep skillet over medium-high heat (375⁰F). Deep-fry each fish one at a time until crisp and golden brown. Remove fish to a colander or rack lined with paper toweling. Once excess oil has drained off, transfer the fish to a pan and hold in a warm oven.
Fifth Step → In another saucepan, sauté the onions and bell peppers on high heat for 3 minutes until caramelized. Season with salt and pepper and use to garnish the fish.
Final Step → Serve that delicious fish and make your party proud. You've just served them the most delicious tilapia they've ever had, and it's damn affordable too!
