Moroccan Bolognese Pasta (Vegan)



INGREDIENTS


  • 2 tbsp olive oil

  • 1 onion, finely diced

  • 1 carrot, finely diced

  • 1 celery stick, finely diced

  • 1 garlic clove, minced

  • 300g vegan mince or lentils

  • 1 tbsp Moroccan spice blend

  • 1 tbsp tomato paste

  • 400g canned chopped tomatoes

  • 1/2 cup red wine

  • 2 tsp sea salt

  • ½ tsp black pepper

  • 1 tsp sugar

  • 220g pasta (spaghetti)


Moroccan Spice Blend

  • 1 tbsp each: cumin, coriander, garlic powder, paprika, allspice

  • 1 tsp each: nutmeg, cinnamon, ginger, cayenne pepper, black pepper, salt

  • 1 tbsp brown sugar



DIRECTIONS


  1. Sauté: Heat oil, cook onion, carrot, celery, and garlic.

  2. Simmer Sauce: Add vegan mince, spices, tomato paste, tomatoes, and red wine. Simmer for 30 minutes.

  3. Cook Pasta: Boil pasta until al dente.

  4. Combine: Mix sauce with pasta, adding reserved pasta water as needed.

  5. Serve: Plate pasta, top with sauce, vegan parmesan, and herbs.
